For the rösti : 1 grated zucchini (about 150 g), 1 pinch of salt (to drain the water), 1 egg, 50 g gluten-free flour, 2 Tbs. olive oil, salt, pepper.
For the garnish : 1/2 avocado (sliced), 1slice of smoked salmon or 1 egg, fresh herbs (aneth, dill, parsley).
1. Grate the zucchini, add a pinch of salt and let the water drain for 5 minutes. Place in a clean kitchen towel and squeeze excess water.
2. Add the egg, olive oil, flour, pepper, and mix well.
3. In a heated pan, add a swirl of olive oil, then drop and shape the zucchini mixture into a rosti. Let cook 5 minutes on each side until golden brown.
4. Place the rosti onto a plate and garnish with the avocado, smoked salmon and fresh herbs.
This complete dish will make up for a balanced breakfast, brunch or light meal. Serve with bread or crackers.
