Pie: 2 cups of gluten-free flour, 1 tsp guar gum, ½ cup or 8 Tbs olive oil, 1 egg, salt.
Filling: 1 leek, 4 eggs, 1 1/4 cup almond milk, 150g cooked or smoked salmon, nutmeg, salt, pepper.
1. Make a pie crust with 2 cups of flour, guar gum, 1/2 cup or 8 Tbs of olive oil, 1 egg, salt. Let sit in the refrigerator 1h minimum.
2. Precook the pie crust in the oven for 10mn at 350F.
3. Wash and finely chop the leek. Sauté in a pan with 1 Tbs of olive oil. Let cook on low setting with a lid for 15mn.
4. In a bowl, beat 4 eggs with 1 1/4 cup of almond milk, add a pinch of muscade, salt and pepper.
5. 150g of cooked or smoked salmon pieces.
6. Pour onto the crust and bake in the oven for 30mn at 350F.
7. Serve with a salad.
This quiche does not contain any dairy. If you wish, you can add 150g of grated cheese.
It is a complete meal with protein, carbs and fiber. You can take it to potlucks, picnics and use leftovers for lunch.
