Ingredients

- 2 zucchinis

- 1 cup frozen peas

- 1 green onion

- 1 Tbs olive oil

- 1 Tbs lemon juice

- 1 Tbs fresh mint

- salt & pepper to taste

Directions

Mix all ingredients with 1 cup of water, refrigerate, and serve chill.

Notes

This delicious and creamy soup can be served on a hot summer day as an appetizer or main, alongside with toppings, fresh bread, dips and spreads, for a hefty dose of fiber and antioxidants.

Vegan, vegetarian, paleo.
