Miso Soup

Ingredients

4 cups water, 2 Tbs dulse flakes, 2 bok choys (chopped), 6 shiitake mushrooms (sliced thinly), 4 carrots (sliced thinly), 2 Tbs miso, 2 garlic cloves (crushed), 2 scallions (minced), 8 oz extra firm tofu (cubed, optional).

Directions

1. Bring water to the boil in a large pot. 

2. Rinse vegetables and slice thinly. Place them into pot with dulse. Simmer uncovered for 15mn. Turn the heat off. 

3. Dilute miso paste in a cup with 2 Tbs of broth from the pot. Pour back into pot. Stir well. 

4. Add garlic and scallions, tofu if desired. Stir and serve into bowls.

Notes

Miso soup is the perfect accompaniment to any Asian meal or when you are under the weather. It is warming and healing with probiotic-rich miso, mineral-rich seaweed and immune-boosting shiitake mushrooms.
