4 cups water, 2 Tbs dulse flakes, 2 bok choys (chopped), 6 shiitake mushrooms (sliced thinly), 4 carrots (sliced thinly), 2 Tbs miso, 2 garlic cloves (crushed), 2 scallions (minced), 8 oz extra firm tofu (cubed, optional).
1. Bring water to the boil in a large pot.
2. Rinse vegetables and slice thinly. Place them into pot with dulse. Simmer uncovered for 15mn. Turn the heat off.
3. Dilute miso paste in a cup with 2 Tbs of broth from the pot. Pour back into pot. Stir well.
4. Add garlic and scallions, tofu if desired. Stir and serve into bowls.
