2 bell peppers, 1/4 cup olive oil, fresh/dried herbs, 2 cloves of garlic, salt & pepper.
1. Preheat the oven at 400F/200C.
2. Wash the bell peppers and dry them with a towel.
3. Place them in an oven proof dish in your oven and bake for about 20 minutes, until the skin turns black and detaches from the flesh, turning them halfway through.
4. Let them cool down.
5. Peel the skin off, remove the core and seeds. Rinse the strips of flesh and pat them dry.
6. Place the strips of the bell pepper in a flat dish with 1/4 cup of olive oil, fresh or dried herbs (basil, oregano, parsley, thyme, etc,), 2 mashed cloves of garlic, salt & pepper. Let marinate for an hour or two minimum so the flavors blend.
7. Serve with fresh bread or crackers or use in a recipe.
High in antioxidants and fiber, this dish makes a great side, starter or appetizer.
