1 cup brown rice flour, 1 cup buckwheat flour, 1 tsp baking powder, 1 tsp baking soda, 1 tsp xanthan gum, ½ tsp salt, 2 eggs, 3 Tbs coconut oil (melted), 2 cups milk of choice.
1.In a bowl, mix together the flours, baking powder, baking soda, xanthan gum and salt.
2.Crack the eggs in the bowl, add milk and oil and stir until well blended.
3.Laddle a serving in a hot pan and cook about 3 mn on each side.
4.Serve with fresh berries, nut butter, raw honey or maple syrup.
These pancakes are delicious and nutritious. You can make a batch ahead of time and freeze them in freezer bags. Simply plop them in your toaster on busy mornings for a quick breakfast treat.
