- 1 cucumber
- 2 large tomatoes
- 1/2 red bell pepper
- 1 yellow onion
- 1 garlic clove
- 1 handful of basil
- 1 Tbs balsamic vinegar
- 2 Tbs extra virgin olive oil
- salt & pepper to taste
Blend all ingredients in a high speed blender and serve cold.
Gaspacho: It is too hot to cook and I have heaps of summer vegetables in my kitchen, so it is gaspacho for dinner with cooling cucumber, tomatoes, bell pepper, onion, garlic, basil, balsamic vinegar and extra virgin olive oil blended away in my Vitamix for a super creamy soup. You cannot overdose on antioxidants, right?!
