Frittata Muffins

Ingredients

6 eggs, 2 cups chopped cooked vegetables and/or meat (asparagus, kale, fennel, mushrooms, ham, smoked salmon), 2 Tbs chopped fresh herbs (parsley, basil, chives), sea salt and pepper, pinch of nutmeg, 1 Tbs olive oil.

Directions

1. Preheat the oven to 325°F. In a large bowl, beat eggs and stir in vegetables and/or meat, herbs, nutmeg, salt and pepper.

2. Oil a muffin tray and carefully swirl around to completely coat the bottom and sides.

3. Add egg mixture, spread out evenly and bake in the oven until the edges and bottom are set and golden brown, 15 mn (carefully loosen an edge to peek.)

4. Remove the muffin tray from the oven. Loosen edges and bottom of frittata muffins with a table knife and spatula, carefully removing the muffins.

5. Serve warm, at room temperature or cold with a side salad or as appetizers.

Notes

A great snack, appetizer, lunch on the go, complete with protein and vegetables!

Gluten/dairy-free.
