1 fennel
1 orange
1 pomegranate
fennel fronds
olive oil, salt & pepper to taste
1. Wash the fennel, orange and pomegranate.
2. Remove the seeds of the pomegranate and put it aside.
3. Shave the fennel thinly with a mandoline and put the leaves aside.
4. Peel the orange and cut it across in 1/4 cm slices, reserve the juice.
5. Dispose in a platter the shaved fennel, the orange slices, and sprinkle with pomegranate seeds.
6. Drizzle the juice of the orange and some olive oil, add the chopped-up fennel leaves, salt & pepper to taste... Enjoy!
