2 large organic chicken breasts, juice of 1 lemon or orange + zest, 2 Tbs olive oil, 2 garlic cloves (crushed), 1/4 cup of fresh or dried herbs (basil, oregano, rosemary, thyme, sage, etc), 1/2 tsp sea salt, black pepper.


1. Make marinade in a flat oven-proof dish (Pyrex style): zest lemon, add lemon or orange juice, olive oil, garlic cloves, herbs, salt and pepper. 

2. Mix ingredients and place chicken breasts in the dish, making sure to coat them evenly with the marinade. 

3. Cover dish with plastic film and place in the fridge for 3-6 hours until ready to cook in the oven (350F for 30mn) or grill on the BBQ. 

4. Serve with a plate full of colorful vegetables.


This marinade is easy to prepare and can be used as a base for preparing chicken breasts. You can substitute orange for lemon in the Fall for a sweeter taste that pairs well with root vegetables or sweet potatoes.
