1 cup brown rice and 1/4 cup wild rice (soaked overnight for optimal digestion & absorption), 1/2 package of frozen peas, 2 scallions (chopped finely), 1/2 cup parsley (chopped finely), 1/4 cup mint (chopped finely), juice of 1/2 lemon, 2 Tbs olive oil, 1 garlic clove (crushed), sea salt and pepper.
1. Drain rice, rinse and cook in rice cooker with 1 1/2 cups of filtered water.
2. Cook peas until just warm in a large pan.
3. When the rice is cooked, add it to the pan with all the other ingredients. Mix well.
4. Serve with steamed broccolini or a green salad and top with avocado.
This dish is a mock, pain-free version of a risotto :) I use a combination of brown and wild rice that I previously cook and add the rest of the ingredients. You can add pesto for a creamier texture.
