3 1/4 cups asparagus, cut into small bites
2 1/2 cups vegetable stock
1 large avocado
1/3 cup almond milk (unsweetened)
1 small garlic clove
¼ cup fresh mint, finely chopped or sprouted seeds for garnish
2 Tbs lemon juice
salt & pepper to taste
1. Steam the asparagus for 10 minutes.
2. Place all ingredients in a blender until smooth.
3. Serve into bowls, add a drizzle of almond milk with a few mint leaves or sprouted seeds.
