4 small artichokes, 1/4 cup olive oil, 1/2 lemon (juice), 1/2 tsp sea salt, 1/4 tsp ground black pepper, 1/4 cup parsley (chopped).
1. Wash the artichokes and trim a couple of base leaves. Cut off the stems and place them in the basket of a large steamer. The stems can be eaten if they are tender enough. They are slightly more bitter.
2. Steam for about 45 mn-1 hour until the base leaves come off easily.
3. In the meantime whisk the dressing ingredients together until smooth.
4. Serve artichokes on individual plates. Use a knife to scrape the meat off each leaf and drizzle the dressing over it.
Most people don’t know what to do with artichokes and find them tedious to eat, but every bite is well worth the extra work. I find the steaming method the easiest and the one that retains the most nutrients. Artichokes not only taste delicious, but they are full of antioxidants and fiber. They are a potent detoxifier for your liver and should be eaten regularly to keep your digestive organs clean.
